What do you do when you have over ripe bananas and know you shouldn’t be cooking? You supervise Hubby cooking a Chocolate Banana Loaf of course, and if he can do it anyone can. Daughter can attest to it tasting as delicious as ever.
- 250g/9oz plain flour
- 25g/1oz cocoa powder
- 1 tsp baking powder
- ¼ tsp bicarbonate of soda
- pinch of salt
- 200g/7oz golden caster sugar
- 2 large very ripe bananas (3 med, 4 small)
- 2 eggs
- 125g/4½oz butter
- 100g/3½oz good-quality chocolate
Grease and line a loaf tin.
Melt the butter.
Sift the plain flour, cocoa powder, baking powder, bicarbonate of soda, salt and sugar into a large bowl.
Chop the chocolate into small pieces.
Mash the bananas in a separate bowl, beat in the eggs and melted butter.
Fold the banana mixture into the flour mixture until just combined. Fold in the chocolate and spoon the mixture into the loaf tin.
Bake for 50-60 minutes.
