Hare With Puy Lentils

Yes I said hare, not rabbit, it was the first time and the last time I will be having hare, not to my taste very gamey and livery in flavour.

  • Chop up an onion, slice a couple of sticks of celery and fry till clear.
  • Add the puy lentils a couple of juniper berrier, a good spring of thyme, a few peppercorns and a 1/2 and 1/2 mixture of chicken stock and red wine.
  • Bring to the boil and simmer until lentils are cooked, add some apple and cranberry jelly, or any other jelly you happen to have to finish it off.
  • Season the hare fillets and fry in a little olive oil for 5 minutes on each side.
